JOB DESCRIPTION:

Position Summary:

As the Executive Chef, your primary responsibility will be to provide high-quality meals and exceptional dining experiences for guests, hunters, and staff. Alongside preparing and cooking meals during the hunting season, you will also carry out food ordering and collaborate with other staff members to ensure a positive guest experience. 

The incumbent in this position is expected to model the following practices on a daily basis. 1) Demonstrate alignment with the company's mission and core business values; 2) Collaborate with key internal/external resources; 3) Participate in ongoing self-development.

Essential Functions:

      • Prepares, presents, and delivers three meals per day including cookouts and appetizers before some meals in a timely manner.
      • Create menus and ensure quality of meals (prepare fresh, no pre-made items).
      • Orders and purchases food supplies, ingredients, and kitchen equipment.
      • Manages cost control and budget.
      • Coordinates schedules, menus, and special events with ranch management and staff.
      • Ensures proper food handling, cooling, storage, and safety protocols and regulations.
      • Interacts with various guests in a professional and engaging manner.
      • Provides exceptional guest experiences by delivering friendly, attentive, and efficient service.
      • Anticipates and fulfills guests' needs and preferences, ensuring their comfort and satisfaction.
      • Troubleshoots and resolves operational issues.
      • Works safely at all times and adheres to all applicable safety policies; complies with all company policies, procedures, and standards.
      • Performs other duties as assigned. 

Knowledge, Skill, and Abilities:

      • Advanced knowledge and experience with culinary preparations and cooking.
      • Knowledge of health regulations, food safety standards, and proper sanitation practices.
      • Understanding of nutritional values, dietary restrictions, and balanced meal planning.
      • Expertise in creating innovative and appealing menus that cater to diverse tastes and dietary needs.
      • Skill in developing unique and visually appealing dishes that stand out.
      • Effective communication skills to coordinate with staff, suppliers, and customers. 
      • Ability to manage time efficiently, ensuring timely preparation and delivery of meals.
      • Skill in quickly addressing and resolving issues that arise in the kitchen.
      • Ability to adapt to changing circumstances, such as menu adjustments or special dietary requests.
      • Ability to work long hours in a fast paced environment. 
      • Ability to understand and meet customer expectations, ensuring a positive dining experience. 
      • Flexibility to work varying hours to include evenings and weekends. 

Education and Experience:

      • Culinary Degree/Certification or equivalent work experience preferred. 
      • Three or more years of experience preferred. 
      • Advanced experience with culinary preparations and cooking

Schedule:

      • Monday-Friday – Breakfast, Lunch, Dinner, and Snacks.
      • Weekends - Twice a month (September through December) and every weekend ( January through February).

Supervisory Responsibilities:

      • None.

Travel:

      • Minimal travel may be required as it relates to executing job duties.

Physical Requirements:

      • This role requires the ability to stand for extended periods and lift and carry heavy objects up to 50 pounds.
      • Ability to work long hours, especially during events or busy periods. 

Work Environment:

      • The job is generally performed in kitchen with exposure to various temperature extremes.
      • Frequently works at a fast-pace with unscheduled interruptions.
